Honey isn’t just a treat—it’s a seasonal harvest, just like fruits and vegetables. Unlike grocery store honey, which is shipped from all over the world and often blended with sugar syrups due to lax regulations, local honey is pure, raw, and reflects the land it comes from.
When you buy from a local beekeeper, you get to know exactly how the bees and honey are managed, ensuring every bottle is filled with nothing but nature’s best. Plus, local honey offers the added benefit of microdosed pollen from our North Texas plants, helping with seasonal allergies and connecting you to the very landscape that surrounds us.
But here’s the catch: Weather matters.
Here in North Texas, our honey harvests can be incredible—or completely wiped out—depending on the season’s rain patterns.
In Fall 2024, we had one of the driest seasons on our record, meaning almost no honey was produced—just enough to sustain the bees through winter. But we’re always looking forward, and as spring arrives, we’re hoping for the perfect balance of sunshine and rain to bring a beautiful spring honey crop in 2025.
Local honey is worth the wait. It’s the real deal—crafted by bees, shaped by nature, and nurtured by your neighborhood beekeeper. When the season is good, the honey is flowing. When it’s not, we care for the bees and wait for nature’s rhythm to return.

As a descendant of a family who journeyed to Texas in the 1840s, I've always felt a deep connection to the land. Growing up, my family's roots were firmly planted in farming and ranching, a legacy that has shaped my understanding of nature's rhythms.
In today's fast-paced, technology-driven world, I've found solace and purpose in returning to these agrarian roots. As an engineer and neurotechnologist, I've spent countless hours immersed in the brain science and digital realm. Yet, a part of me yearns for the simplicity and beauty of the natural world.
Gardening, beekeeping, rabbit husbandry, chicken keeping (in addition to little human raising) have become my passions. I've dedicated myself to cultivating chemical-free, sustainable practices, ensuring that my family has access to wholesome, nutrient-rich chemical-free "brain" foods.
With Lake Highlands Honey, I'm excited to share my knowledge and products with the East Dallas community. By offering a range of natural, handcrafted items, I hope to inspire others to embrace a more sustainable and fulfilling lifestyle.

Your honey's amber color is beautifully rich. Best of all, the first taste has notes of Basil, then comes the smoothness of brown sugar and finally the flare of Lantana and Prairie Salvia, Wow! This honey is so delicious.
I made a declaration to my husband: This honey will not be used for sauces and marinades - only to sweeten fluffy pancakes, crispy waffles or even a savory saltine cracker!
